The food industry abounds with ideas for healthy and sustainable innovations but translating these into production processes is often difficult. TNO uses its knowledge of (food) materials and equipment to work on innovative production processes that are distinctive by their high degree of control and flexibility. TNO develops innovative equipment to help manufacturers to more accurately control their production processes. Mechanical engineers, physicists, industrial designers and experts in chemistry and rapid manufacturing work in tandem with food ingredients experts. TNO has considerable experience in using inkjet heads to print all kinds of materials, like monomers or metals. We were one of the first in the food industry to use inkjet technology as an alternative to conventional spray-drying and for the encapsulation of flavours and nutrients. Two techniques on which TNO is working are print-drying and the production of microcapsules based on print technology. These techniques allow manufacturers to reduce their energy consumption for processes and they are very suitable for optimising the processing of sensitive ingredients. TNO is also working on electrospinning whereby food-grade materials are spun into fibres under the influence of an electrical field.
